One-Pan Sausage & Peaches with Roasted Vegetables

In honor of Peach Day at the Easton Farmers’ Market, we bring to you this Sausage and Peach recipe. This is a one-pan, perfect summer meal!

Ingredients

  • 4 Links (1 pkgs) Breakaway Farms Mild Italian Sausage (Find Chicken, Turkey, & Pork Sausages Here)

  • 1lb potatoes of your choice, cut into wedges

  • 2 medium peaches, remove pits, and cut into wedges

  • 2 medium bell peppers, remove seeds, cut into wedges

  • 2 small onions, cut into wedges

  • 2-3 tbsp peach or apricot jam

  • 1 tbsp olive oil

  • 4-8 fresh sage leave

  • 1 clove garlic, minced or sliced thin

  • 1/2 tsp sea salt

  • 1/2 tsp fresh ground black pepper

  • 1.5 tbsp lemon juice

Instructions

  1. Preheat oven or grill to 425°F.

  2. Place sausages, potatoes, peaches, peppers, onions, jam, sage leaves, olive oil, and garlic in a bowl & toss to fully coat ingredients with jam and olive oil. Transfer to a lined cookie sheet. Season with salt and pepper.

  3. Bake or grill with the lid closed for 40-50 minutes, flipping all ingredients halfway, until all ingredients are starting to brown and are cooked through.

  4. Remove from the oven or grill and squeeze lemon juice all over dish.

Serve warm, and enjoy!
