Szechuan Zucchini Stir Fry

INGREDIENTS

  • 1 lb Breakway Farms Grass-Fed Ground Beef or Pasture-Raised Ground Pork

  • 6 cups zucchini about 3 medium

  • 8 oz of your favorite mushrooms

  • 1 Tbsp minced garlic

  • 1 Medium Onion

  • 1 Large Red Pepper

  • 3 Tbsp coconut oil, divided

  • Sea salt and black pepper

SAUCE

  • 1 Tbsp sesame oil

  • 1/4 cup coconut aminos or soy sauce

  • 1 Tbsp fresh minced ginger or 1 tsp ground ginger

  • 1 tsp apple cider vinegar

  • 1 tsp hot sauce

INSTRUCTIONS

Slice zucchini into 1/4-inch rounds and then cut in half. Slice mushrooms, onion, and red pepper into similar size pieces.

Whisk together sauce ingredients in a small bowl and set aside.

Heat a large skillet or wok over medium-high heat until a drop of water vaporizes immediately on contact. Add 1.5 Tbsp of coconut oil and swirl around the pan until evenly coated. Add your choice of ground meat and season with sea salt and black pepper. Cook until browned, stirring often to break it up finely. Remove the meat to plate, let rest.

Return the pan to the stove and re-heat the pan until it's hot enough to vaporize a drop of water on contact again. Add the remaining 1.5 Tbsp of coconut oil and swirl around the bottom of the pan. Add the sliced zucchini and other veggies and cook over high heat, stirring often, until softened (about 3-5 minutes). Then add the minced garlic and saute for one more minute.

Reduce the heat to medium. Add the cooked meat to the pan with the veggies and add the sauce. Toss the meat, veggies, and sauce together and heat through (approximately 1 minute). Serve immediately.
