Remove the steak from the fridge, season generously with salt and pepper, and let sit at room temperature for 30 minutes while you prepare your favorite fajita ingredients & preheat the grill to 450 degrees (yes, you want it hot).

When ready to grill, coat the steak in a little bit of olive oil, & place it on the grill. Sear on high heat for 1-2 minutes per side depending on the thickness of the steak.

Cook the steak over medium heat for 6-10 minutes, opening the grill to flip the steak 1 time at the halfway point. Keep an eye on it and don’t walk away. Use your meat thermometer. It’s always best to rely on the meat thermometer rather than cooking times. There are just too many variables.

  • Rare: 125 degrees F

  • Medium Rare: 135 degrees F

  • Medium: 145 degrees F

  • Medium Well: 155 degrees F

  • Well Done: 165 degrees F

Remove & let rest for 2 minutes, then slice against the grain and serve.
