Fruit & Sausage Fried Rice

This recipe is a perfect use for leftover rice!

Prep Time: 10-15 mins Cook Time: 10-12 mins Total Time: 20-25 mins

Ingredients:

  • 6-8tbsp Butter

  • 1 Large Apple, diced

  • 2 Firm, Fresh Peaches, diced 

  • 1 cup Shredded Carrots

  • 2 Firm but ripe Pears, diced

  • 4 cups of cooked Jasmine Rice (you can use any kind of rice, but we love the sweetness of Jasmine) 

  • 1 pkg Breakaway Farms Smoked Sausage of your choice; Smokehouse Sausage, Kielbasa, Andouille (mild spice), or Jalapeno & Cheddar (spicy)

  • 4 Breakaway Farms pasture-raised eggs, whisked 

  • Salt & pepper to taste

Instructions:

Dice all fruit and shred carrots.

Heat butter in a large skillet over medium heat. Add your firm fruits/ vegetables first (Apples, Peaches, Carrots) and saute for approximately 4 minutes. 

In the meantime, slice or dice the smoked sausage.

Add Pears to the skillet and saute for 1-2 more minutes. Then add rice, sausage & eggs. Cook for an additional 5 minutes until the sausage is warmed and the eggs are fully cooked.

Serve and enjoy!
