Roast Beef Gyros
If you are in search of light, refreshing meals during the hot summer months, this is for you! This quick, 10 minute recipe will satisfy the whole family on a hot summer eve.
Ingredients:
8 oz pkg Breakaway Farms Sliced Roast Beef (serve cold or heat in a skillet)
Tzatziki (if you wish to make your own):
1 cucumber, finely diced, reserve ½ for serving
16oz container Greek Yogurt
1 red onion, finely diced, reserve ½ for serving
2 dashes white wine vinegar
½ teaspoon garlic powder
1 teaspoon dill
1 teaspoon sea salt
To Serve:
4pc gyro bread (or pita) - Here’s a well-known brand: https://kontos.com/product/pocket-less-pita-white/ but if you wish, you can also make your own. Find a great gyro bread recipe HERE
olive oil (for coating)
1 lrg tomato, sliced
2-4 ounces crumbled feta cheese
6-8 ounces black olives, sliced
Instructions:
To make the Tzatziki sauce, mix finely diced cucumber, diced red onion, vinegar, yogurt, and seasonings. Let sit, covered, in the fridge. Can make ahead.
Lightly brush olive oil on flatbread and pan fry over low heat until soft and warm. Fill with beef, tzatziki, feta, tomato, cucumber, onions, and olives. Serve and enjoy!
