Free-Range Egg Salad

This recipe is a simple and easy way to use the hardboiled eggs that your kids decorated for Easter!

Servings: 4 * Total Time: 15min

Ingredients:

  • 8 Breakaway Farms Free-Range Eggs, hardboiled

  • 1/2 cup mayonnaise

  • 1 tablespoon yellow mustard

  • 1/4 cup chopped green onion

  • Sea salt & freshly ground black pepper to taste

  • 1/4 tsp paprika

Instructions

  • After peeling your hard-boiled eggs, gently dry with paper towels.

  • Chop eggs & stir in the mayonnaise, mustard, green onions, salt, pepper, and paprika, and mix well.

  • Serve on top of your favorite bread, crackers, or lettuce boat (for a low-carb meal!)
