Free-Range Egg Salad
This recipe is a simple and easy way to use the hardboiled eggs that your kids decorated for Easter!

Ingredients:
8 Breakaway Farms Free-Range Eggs, hardboiled
1/2 cup mayonnaise
1 tablespoon yellow mustard
1/4 cup chopped green onion
Sea salt & freshly ground black pepper to taste
1/4 tsp paprika
Instructions
After peeling your hard-boiled eggs, gently dry with paper towels.
Chop eggs & stir in the mayonnaise, mustard, green onions, salt, pepper, and paprika, and mix well.
Serve on top of your favorite bread, crackers, or lettuce boat (for a low-carb meal!)
