Winter Vegetable & Smoked Sausage Kabobs
Prep Time: 30 minutes * Cook Time: 20 minutes * Serves 5-6
The wonderful thing about this recipe is its versatility! If you are missing any of the vegetables, you can simply do without or substitute something else. Furthermore, this is a great recipe for when you have helping hands in the kitchen. Set up an assembly line and allow each person to skewer their meat or vegetables of choice!
Ingredients/Supplies:
15 wooden skewers
1lb Breakaway Farms Smokehouse Sausage, cut into ¾-inch slices
3 tablespoons extra-virgin olive oil
15 medium Brussels sprouts, outer leaves removed
1 large sweet potato, cut into ¾-inch cubes
1 small head cauliflower, broken into florets (you’ll need 15 florets)
12oz of your favorite fresh mushrooms
1 large red onion, cut into 1 ½-inch pieces
Directions:
Soak skewers in water for at least 30 minutes.
Preheat oven to 450 F.
Toss all vegetables in extra virgin olive oil
Place 2 slices of sausage and 1 of each type of vegetable on each skewer (place in any order you prefer).
Place skewers on a baking sheet & bake for 10 minutes.
Remove from oven, turn skewers and bake for another 10 minutes.
Enjoy warm!
