Asian Pork Chop Stir Fry
Prep Time: 20 Min * Cook Time: 10min * Serves 6
Sauce Ingredients
½ Cup soy sauce
1 Teaspoon sesame oil
½ Tablespoon rice vinegar
2 Cloves garlic, minced
1-2 Teaspoons grated ginger
1 Tablespoon sugar or honey *up to 2 tablespoons to taste
1 Tablespoon cornstarch
Pinch of red pepper flakes, optional
Other Ingredients
2 Tablespoons Extra virgin olive oil
1 Medium red bell pepper, thinly sliced
1 Medium onion, thinly sliced
1 Bunch baby bok choy, leaves separated
1.5 Cups broccoli florets, finely chopped
4oz oyster mushrooms, thinly sliced
2 Tablespoons toasted sesame seeds, for garnish, optional
Sauce Instructions: In a bowl or mason jar with a lid, combine all ingredients & whisk or shake well until well combined.
Stir Fry Instructions
Cut boneless pork chops into ¼” strips
Heat the olive oil in a wok or a large frying pan with high sides over medium-high heat. Add the pork and cook, stirring occasionally, until the pork is nicely browned on all sides, around 2-3 minutes.
Add bell pepper, onion, baby bok choy, broccoli florets & oyster mushrooms. Stir fry the veggies until they become crisp-tender, around 3-4 minutes.
Add Sauce and heat through.
Serve over your favorite rice and enjoy!
