PA Dutch Chicken Pot Pie

This hearty and delicious meal is perfect on a cool, autumn day.
Prep Time: 45min * Serves: 12

Ingredients

·       2 lbs boneless chicken breast, cooked

·       12 c pasture-raised chicken broth

·       ½ c celery, diced

·       ½ c onion, diced

·       ½ c carrots, chopped

·       ½ c sweet corn removed from cob

·       2 tsp sea salt

·       1 tsp fresh ground pepper

·       1 tsp saffron

·       2½ c potatoes, peeled and cut into chunks

For the Noodles

·       2 c all-purpose flour

·       2 pasture-raised eggs

·       1/2-3/4 c water or broth (for noodles)

To make the noodles:

  1. In a medium bowl blend the flour and eggs, mixing until the dough becomes shaggy.

  2. Add the water or broth two tablespoons at a time, and mix until a dough starts to form. Knead until the dough comes together adding more water/broth a teaspoon at a time if needed. If the dough becomes too sticky, add more flour a teaspoon at a time to get the right texture.

  3. Separate dough into two balls, wrap in saran wrap and allow to rest for 20-30 minutes.

  4. Flour your surface to prevent sticking, then shape the dough into a rectangle or square and roll out to ⅛ of an inch thickness, you should not be able to see through the dough.

  5. Cut dough into 1x1 inch squares. A pizza cutter works well for this. Repeat with the second dough ball. Add noodles to the soup as per the instructions below.

Pot Pie Instructions

  1. Add broth, spices, carrots, celery and onion to a large stockpot and bring to a low boil. Reduce heat and let simmer until vegetables are tender.

  2. When vegetables are tender, add potatoes and continue simmering until potatoes are tender. Add cooked chicken and adjust seasonings if needed. Increase the heat just enough to bring the soup to a rolling boil.

  3. Working quickly, add the noodle squares a few at a time into the boiling broth, stirring between batches. When all noodles have been added, cover and continue to boil for one minute, then remove from heat and allow to sit for 15 minutes.

Note: if you don’t have the time to make these homemade noodles, no judgment! Simply use egg noodles in place and enjoy!
